“Tonkotsu” is one of the best Ramen Noodles. This special melting soup was born in Fukuoka Prefecture in 1947. At that time, there was only a poor kitchen environment because of the postwar era. It must have been a difficult situation and it was a wonderful invention in a devastated town.
Before Tonkotsu Ramen, we never used Pork Bones for any Japanese dishes. But, after WWⅡ, we don’t have enough food materials, so Japanese people started to use Pork Bones for broth. About 80 years ago, one Japanese speciality was born in empty land.
Nowadays, there are so many Tonkotsu Ramen places, so you can find your own favorite bowl easily around here. If you find a nice and fancy Ramen restaurant luckily, you will have a creamy and extra creamy taste of Ramen soup such as white clam chowder.
Ramen is one of the best Japanese cuisines, because chef’s faith and cook’s hardworks dwell in the Ramen bowls.
“Tonkotsu Broth” needs 4 to 5 hours boiling with a high heat fire. Furthermore, it does need steering every 5 to 10 minutes to prevent bottom burning. Because of too much preparation, the Ramen chef has to be stoic and patient.
In the Ramen place, they really have huge preparation tasks, thus, their operation is always hectic. On the contrary, we must not rush about dishing up on our plates. For example, draining noodle water is an important part of Ramen cooking. If we bring excess water into the seasoned soup, breaking the recipe will occur.
Sometimes, it’s hard to explain what happened in the back of the house. Line cooks should rush during the count 1 to 9, as long as they can. However, nobody doesn’t need to hurry in their last moment with dishing up the plate. Everyone has to be a chef , because we need to check if everything is safe and alright. Final dimension of topping should take enough time.
Let’s get back to Japanese history. We have too little space to tell you how Kuroda Kanbei made Hideyoshi’s life successful as Leader of the Japanese Samurai.
Eventually, all Samurai corps were unified by Hideyoshi in 1591. The biggest reason was Kuroda Kanbei’s hard work. He took the role of Chief advisor to Hideyoshi’s Samurai Corp, since he was a really brilliant strategist.
Needless to say, he was a highly respected Samurai warrior, and known for bravery and loyalty. And he made the beautiful city “Fukuoka” with his son. I’m thankful for their hardships. When I think about our predecessors everytime, I’m reminded of how lucky we are today.
